Description:

The Swiss Water Process originated in Vancouver, Canada. This patented method removes 99.9% of the caffeine from coffee by immersing the beans in Green Coffee Extract (GCE), a solution containing all the water-soluble components found in coffee except caffeine. The solution is heated, which causes the beans to become porous and allows caffeine molecules to be removed from the coffee beans via osmosis into the GCE solution. This process is designed to remove caffeine without compromising the important components that affect flavour and aroma.
